Overview

Cuisine as theatre

Executive Chef Mara Ellison leads a kitchen built on Queensland produce — line-caught reef fish, Darling Downs beef, herbs from our own rooftop garden. The signature counter seats ten guests along a marble rail overlooking the pass, where each course is finished and explained by the brigade that made it.

Beyond the counter: a formal dining room, a six-seat chef's table inside the kitchen itself, and private dining rooms for celebrations. Our sommelier draws on a 1,400-label cellar with particular depth in Australian and Burgundian producers.

The Counter

Ten seats at the marble pass. Twelve courses, each finished in front of you, with optional wine pairing.

Chef's Table

Six seats inside the kitchen. The brigade cooks around you; the menu is written that afternoon.

Private rooms

Three dining rooms seating 8–24, with dedicated menus, wine service and complete privacy.

Late supper

A short-menu service runs until 1am for guests returning from the gaming floor — oysters, champagne, steak frites.

The Experience

An evening at the counter

The counter experience begins with a walk through the kitchen — apron optional — and a glass of sparkling while the first courses are prepared. Courses arrive in a deliberate rhythm: snacks, then the sea, then the land, then a dessert sequence the pastry team builds at the rail.

Wine pairings lean Australian — Yarra Valley chardonnay, Margaret River cabernet — with a classic Burgundy track for traditionalists. The whole evening runs about three hours and ends wherever you want it to.

Counter seats are limited and released monthly. Here's the path from reservation to dessert.

Reserve your seat

Counter and chef's table seats release on the first of each month for the following month. Our team can hold a provisional seat while your plans firm up.

Share your preferences

Allergies, dislikes, occasions — tell us at booking and the menu is quietly adjusted. Nothing is announced; it simply arrives correct.

The menu unfolds

Courses arrive in sequence, each introduced by the chef who plated it. The pacing is yours — slower is always an option.

Finish where you like

Dessert at the rail, a nightcap in the lounge, or a digestif sent to your suite. The evening ends on your terms.
